Sweet Potato Toasts
Who needs bread when you can make sweet potato toasts?

  • 1 large sweet potato
  • 1 tspn olive oil I used the garlic olive oil from Trader Joe's.
  • seasonings crack a little bit of pink Himalayan salt, pepper, turmeric and sprinkle garlic powder.

Instructions
  1. First pre-heat the oven to 350 degrees.
  2. You'll want to clean the skin of your sweet potato. You won't want the dirt on them or any little ugly spots. The skin on adds a nice texture like the edges of the bread.
  3. Once you clean up your potato you'll want to slice it long ways. I used a mandoline for this process and "slithered" the sweet potato.
  4. Next you'll lightly coat your baking sheet with olive oil or coconut oil spray. Then you'll lay your sweet potato slices on the pan and give them a coat with olive oil (you can use a brush for this so it's not too much or eliminate the olive oil over top) + seasonings. I flipped them over and also season the other side minus the olive oil.
  5. Place your sweet potato slices in the oven for 8-10 minutes (until you notice a brown) then flip them and do the same on the other side.
  6. Carefully take them out of the oven and let them cool for 5 minutes before topping.
  7. Once you top them you'll want to take a good picture before you bite into them!
Recipe Notes

I used a $10 mandoline from TJ Maxx to slither the potato. You can slice it but be very careful.*

  1. The first thing you'll want to do it get your tofu marinated. The longer they sit in the seasonings the better the flavor.
  2. Next, you'll get your broth started. You'll add your sliced onions in your pot with the olive oil already heated up. Get them browned. (Medium heat)
  3. Once they brown you'll add your garlic into the pot with your ginger. Stir to make sure it does not burn.
  4. Once you start smelling the 3 ingredients combined or seeing them cooked, add your broth, water and soy sauce.
  5. Stir them together and add your seasonings. Make sure that it does not boil. Add to super low heat and cover.
  6. While your broth binds together with flavors, start spiralizing your zucchini. In order to not make your zucchini mushy, place them in a bowl that can absorb heat. Blanch them with boiling water and then rinse them with cold water to stop the cooking process. You can then put them in the fridge to stay cool.
  7. Your bok choy does not take long to cook. I charred them in the broiler after lightly coating them with the garlic olive oil. Be sure to keep your eye on these because they will burn quickly.
  8. Now it's time to get that tofu nice and crispy! You'll add it to a coated, heated pan and sear each side for 4-5 minutes or until desired color.
  9. Give your broth a stir and a taste then start the layering process.
  10. Add your pan seared tofu, the charred bok choy, the broth and leave space for the zoodles.
  11. Lastly, top with your green onions and carrots (for crunch), fresh garlic & ginger (optional) -- Don't forget to take a picture!
Recipe Notes

If you want to add more hearty flavors you can go with a beef or pork broth and sear a fatty cut of beef or a pork belly. You can also go with a chicken broth and pan sear the chicken.
