Instructions
  1. Clean and peel the sweet potato skin. Then, cut into even chunks so it can boil evenly.
  2. Bring water to a boil then place your sweet potato chunks in the water. Stir on occasion until you can put a fork in your sweet potato (roughly 12-18 minutes).
  3. Drain the water then mash it and add the banana in the mixture to mash.
  4. You'll then begin to add your wet ingredients. Mix your dry ingredients to the side and add it in.
  5. Once everything is completely mixed you can pour some in your lightly coated (with either olive oil spray or coconut oil) waffle maker.
  6. Be sure that you get them browned and/or crisp before serving. You can top them with bananas + maple syrup or a berry compote (recipe linked in recipe notes).
Recipe Notes

You can also use this recipe for pancakes.

Here is the recipe for the berry compote.

For flax eggs you'll need one tablespoon of flax seeds and three tablespoons of water to replace one egg. Be sure that you grind the flax seeds before mixing it with the water. Whisk it until it has a gelatin consistency. If you already have ground flax seeds you'll use 2 1/2 teaspoons pre-ground with the same measurement of water.
